Buckwheat Strawberry Pancakes

After my oldest daughter watched an episode of Daniel Tiger, she came away wanting to make strawberry pancakes.  So of course in an effort to feed my girls healthy alternatives, I decided to go the buckwheat route. 

I love these Bob’s Red Mill bags. They make flour alternatives (i.e. Coconut flour, almond flour), and all kinds of organic mixes.  This mix calls for eggs, oil and milk.

I doubled the recipe, used almond milk and coconut oil. 

Once the batter was mixed and on the griddle I added a few organic chopped strawberries to the top. Once ready, I flipped them until golden on the other side. 

We usually finish our pancakes or waffles with some grass-fed butter and agave syrup! These were delicious and I had plenty of extra for breakfast for the rest of the week!
